The following recipe serves 4 people and requires approximately 45 minutes to prepare. You will need 2 onions, yellow pepper, red pepper, a spoonful of tomato concentrate, 500 ml of vegetable stock, pepper (optional), salt (optional), bay leaf, 1-2 teaspoons of sweet pepper, half a bunch of parsley, 4 homemade sausages (cooked), and 4 tablespoons of sour cream.
To begin, peel and dice the onion. Wash the pepper, remove the seeds, peel the potato, and chop both into large cubes. In a pot with hot oil, sauté the pepper and onion for 1-2 minutes, until they become glassy. Next, add the tomato concentrate and potatoes, simmering briefly.
After this, add the stock, salt, pepper (if using), bay leaf, and sweet paprika powder. Allow the mixture to come to a boil, then let it cook covered for 20-25 minutes. Meanwhile, cut the sausages into slices, heat them briefly in the stew, and season them.
Finally, tear off the parsley leaves and chop them. Serve the stew with potatoes with a spoonful of cream and sprinkle with parsley for added flavor.
