Fatheads, a restaurant owned by Jeremy and Ashley Jackson, officially closed last week. The couple had opened the restaurant across the street from West Lincoln Attendance Center. They are parents to a daughter and were expecting another child in September. Now, a new business is set to move into the space previously occupied by Fatheads.

The new restaurant is scheduled to open at 990 West Lincoln Drive Southwest, where Fatheads LLC was located. The Mississippi Department of Health granted a new construction permit for the business, according to health inspection records. The permit was approved on June 4, 2024. The restaurant will be named Grizzly Diner, a nod to the West Lincoln Bears.

Ashley and Jeremy Jackson announced their plans to close Fatheads in May. Jeremy’s nickname, Fathead, was the inspiration for the restaurant’s name. The couple expressed gratitude for the support they received from the West Lincoln community but cited the challenges of running a restaurant with young children. They mentioned plans to open a food truck in the future.

In other news, health inspections for two other establishments in the area went well. Bumpers, located at 101 US51 North, received an “A” rating for the third consecutive time. Similarly, Holiday Inn Express at 1212 Brookway Boulevard earned an “A” rating for the seventh consecutive time. Stay tuned for more updates on local businesses in West Lincoln.
